Considering the importance of good working suspension and the quality and longevity of the Honda\Montesa bearings in comparison to most of the alternatives I say stick with stock.
FYI, the first owner of my bike got a set of the All-Balls and told me it was so loose it was like running the old stock ones so he went back to stock and it was worth it.

Bit of a tight wad with my $ so would upgrade my 4RT before buying new.
Well... if I had cash for a 2017 300RR I think I would buy new and mod my current 4RT as well.

I thought the 2015 standard came with TECH not Showa? Only the Repsol or 300RR have that...

I would have loved to see how far he could have gone as well... Though I don't blame him/them for the custome setup to make it the whole way.

I don't have a Sherco so can't say for sure, but I would be confident a wire gas welder could stich up my wife's Gas Gas frame if that happened to it, so would think one could do yours. A good shop should know for sure.

I change my Clutch oil (ELF740) every 30 hours, my oil ever 15, and the filter every 30... working great and clean every time...
My experience so take it for the 2 cents its worth.

3 kicks... Have you re-jetted? Most of the hard starting I have seen in bikes can be fixed by jetting.

Sounds like you have the same head shape I have, I have plans to try the Hebo. Should be getting one next payday and will let you know how it fits.

Have one myself, with my wife and daughter riding too it's always a possibility to need the unexpected. I haven't needed more then some minor adjustments yet but you never know.

As for carbureted bikes I think their best chance to continue is to go to something like the smart-carb. Whith how well they work I would expect they are the best chance for keeping emissions in check and not needing EFI.

I would love to see no-stop go away but really don't expect that.

I would go with the 250 myself, however as indicated a nice 300 shouldn't be much of an issue and if it seems a bit much you can always soften it out with a few inexpensive modes and then pep it back up later if you want. In the end if you can ride a few at a local event you will have a better idea of what you might like.

I see a lot of pull from the arms, if you start going slower you should be able to compress the suspension with your legs, then snap the knees back and lean the body more to the rear keeping your arms more strait. This will give you a lot more lift with much less power to the wheel letting you get over at a much slower speed.
Also figure 8's are one of the best things you can do and as you learn to balance the bike at a stand still in a static balance or track stand (depending on how you say it) you can mix in doing the static balance at random points during the figure 8's. Did me wonders when I went to my first competition.
It looks like your having fun and learning so keep it up, your doing fine.

I don't know about the 315 but most bikes I have de-restricted have done well to be re-jetted.

As indicated, they are for certain types of registrations in some countries and not needed if using for competition only.

Dam shame... Wish people would consider whether or not they like riding and weather or not it could affect their ability to keep doing so before doing crap like that.

I would think a fixed frame mountain bike with good brakes, the lowest seat you could find, and maybe a some trials handle bars (if you can make them work) would be better than a BMX bike for trials skills practice. Unless you want to do street BMX/trials type riding then maybe a BMX, but even then at 6'5" I would think the mountain bike would work better...

I ride both a trials push and moto-trials and feel it helps me. I ride intermediate...
I don't know if it would help if you ride the upper levels...
