I am currently Sherco mounted but am looking to go Gas Gas. All the bikes are good but have their own quirks. I have had good results getting parts for my Sherco and have heard parts are easily available for Gas Gas. I suggest getting to an event and riding as many different bikes as you can get on.
We have a member of MOTA that is a Gas Gas dealer and a member that is a Beta / Sherco dealer.

If possible try to test ride a variety of bikes and sizes of motors.
Small cc bikes are capable but you need to rev them to the moon to do anything, advantage to small cc is that they require you to use proper technique so you will learn good things. Down side to small cc is if you are at a point just about to make it up/over obstacle and need a little bit more oomph, the small cc bike won't have any left because it is revved out.
250cc and up advantages are more low end torque so less throttle needed to get over most stuff, more like putt putt around. But the larger cc bike will rev out as well, so if you are at that point where you need a little more oomph it will be there and over/up the obstacle you go. And in some cases the oomph of the motor can compensate for lack of technique.
So if you have motorcycling experience I would suggest a 250 or higher, I know world round competitions and these guys on 125cc machines are doing amazing things, but lets face it those bikes are TUNED and rebuilt very often and the riders practice an unholy amount of hours.

Hill climbs body position, squat down on the tank = get your crotch close to the fuel tank. This puts pressure on both wheels, keeps front down and weight on the rear. Feels funny the first couple times but it works.
Try riding it a gear higher, will probably need a little more throttle but a gear higher will help keep the rear from spinning (less torque hitting the rear tire). Add to that slipping the clutch and this should help.
Throttle control + slipping the clutch = good things in mud.
New rear tire always helps.
Generally riders will drop rear tire pressure to around 2 or 3 psi (depending on tire, rider etc...) for muddy conditions.

That would be a great commuter bike, running back and forth to work. If I was running late I could ride "straight" to work, through the fields, ditches, woods etc... Actually now that I think about it, I don't think I would cut any time off the ride to work that way. I think I would have too much fun and just not make it into work. Would have to get out the cell phone and call in "sick"

Yep Sherco 290 is 272cc, Marketing gimmick?? make it sound bigger?
Sherco 0.8 is 80cc
Sherco 1.25 is 125cc
Sherco 2.0 is 200cc
Sherco 2.5 is 250cc
Sherco 2.9 is 272cc what is this trickery??
Sherco Cabby 3.0 is 300cc
(Gas Gas 280 is 272cc)
Anyways so with Sherco taking over Scorpa and putting Sherco engines in Scorpa frames I would tend to assume the T-ride 280 and the X-ride 290 will both be the exact same motor 272cc.

I am using Celebrex...........damn arthritis showed up 11 yrs after an injury.
I have heard Glucosamine has done wonders for some, it did nothing for me. I guess it depends on the knee. I am neither for nor against its use.

That is a lot of fuel, I would tend to think flooding out. Sunk a float maybe. I had that happen on my TLR200 Reflex. Took float out and shook it, I could hear the fuel sloshing inside the float. This one may just have "sticky" spots where the float is getting hung up. I would start with a good carb cleaning.

don't be offended but I am about to ask some silly, simple questions. Just to get them out of the way.
1. How long ago was the bike running?
2. Did it die while running?
3. Does it "sound like it wants to run" when you kick it over?
4. Is fuel getting into the carb and cylinder?
5. Are you tired of reading my questions?

I get along fine with my Sherco It is a 2000 2.9. I have the sprockets set up decent to where 1st is a tractor 2nd is quite usable for almost anything. 3rd great for big hillclimbs, major mud (I suck at anyways) and when I need a bit more ooomph!
But with all that said, My next bike will be a Gas Gas 300, I like the motor and the 6 speed gearbox seems to me to be more versatile.
But I ride like crap so..........take the info with a grain or two of salt

biggest difference you will notice is the gap between 3rd and 4th. basically 1-3 are section gears and 4&5 are trail gears. feels like shifting like this. 1.2..3......4...5

On the off chance that this was not checked: At an event this season one of the bikes would not fire up. It ran great the day before and then he washed it and put it away. At the event, no go. He tried many things, but what we ended up doing was removing bolt that holds the cdi(??? it is located under the fuel tank between the frame rails right up by the steering head, same bolt holds the fuel tank on on early Shercos) anyways removed the bolt and pulled the unit out (no disconnecting) and cleaned up the spot where the bracket makes contact with the frame. The electronics were grounded to the bracket which grounded through the frame. reassemble and he had a great time at the event.
I even got a out of the deal. sweet for me cuz he did the work, I just pointed and watched.
